Nina Roofe PhD, RDN, LD, FAND, CNWE,
Earned the Bachelor of Science degree in Home Economics with an emphasis in Dietetics from the University of Central Arkansas in 1990. She completed the dietetic internship at the University of Arkansas for Medical Sciences in 1991 and began a career in clinical dietetics and management. While directing the Outpatient Nutrition Clinic at St. Francis Health System in Tulsa, she completed the Master of Science degree from the University of Arkansas at Fayetteville in Corporate Health Promotion in 1998. Dr. Roofe has consulted as a clinical RDN in various capacities throughout her career including psychiatric hospitals, long-term care facilities, and privately for families of children with autism and food allergies. In 2010, Dr. Roofe earned the Doctor of Philosophy degree in Family and Consumer Sciences Education from Iowa State University. She has taught dietetics students since 2002 and is currently an Associate Professor and Chair of the Department of Nutrition and Family Sciences. Her research is focused on the impact of service-learning on knowledge integration and specifically interprofessional educational strategies. Other areas of research interest include leadership and appreciative inquiry. Dr. Roofe has served as a site reviewer since 2014 with the Accreditation Council for Education in Nutrition and Dietetics and was elected to the ACEND Board of Directors in 2019. She is currently serving as Chair of the ACEND Accreditation Committee and is the Vice-President of the Council of Administrators in Family & Consumer Sciences. In 2013, Dr. Roofe was recognized as a Fellow of the Academy of Nutrition and Dietetics based on her service to the dietetics profession and by optimizing the nation’s health through food and nutrition. In 2018, she was certified by the American Association of Family & Consumer Sciences as a Nutrition and Wellness Educator (CNWE). Dr. Roofe was appointed to serve a three-year term on the Ethics Committee by the President of the Academy of Nutrition and Dietetics in 2020.
